How do you politely tell a couple you don't want have sex with them again? Probably will still run into them at clubs.

Dear (Anonymous),

You don't have to tell them straight out unless they get really pushy. Politely let them know that:
a) you're not looking for action at this time
b) you're just looking to have a good time tonight with each other
c) you're seeking out a specific fantasy or experience tonight.

There are many more 'excuses' that you can come up with. After a couple of times being told things like this, they should get the hint. After all, we're trying not to hurt anyone's feelings. There is no need for that.
It won't be necessary to be outright blunt with them unless, as previously mentioned, they won't let it go.
